Pumpkin Pie Cake
Gotta love pumpkin "stuff" this time of year! Here's one that's easy, easy . . . but so yummy. I took this to some friends' house the other night and even all the kids (all boys even, mind you) loved it. Or they were being very polite. But it's hard for boys to be that polite without a hint of a grimace when they don't like something. Yep, it's a winner I'd have to say! :)
Pumpkin Pie Cake
a.k.a. Pumpkin Dump Cake
1 (15oz) can pumpkin
1 (12 oz) can evaporated milk
3 eggs
1 tsp nutmeg *
1/2 tsp ginger*
1/2 tsp cloves*
2 tsp cinnamon*
*OR 4 tsp pumpkin pie spice
1/2 tsp salt
3/4 sugar
----------------------
1 (18.25 oz) yellow cake mix
1 cup walnuts (I omitted these, which probably helped with the boys' approval) ;)
3/4 cup or 1 1/2 sticks butter, melted
Preheat oven to 350 degrees F. Lightly grease 9X13 pan. Completely combine first set of ingredients. Pour into prepared pan. Sprinkle with cake mix. Gently pat down with spoon. Sprinkle with nuts, if using. Drizzle with butter. Bake for 50 minutes.* Cool and cut in squares. Serve with or without whipped cream.
*I had to bake it 10 extra minutes, but ovens are different, so watch it carefully.
